White Chocolate Cookies and Cream Rocky Road
Ingredients
- 750 g white chocolate
- 250 g white marshmallows
- 1 cup dessicated coconut
- 150 g oreo biscuits
Method
- Toast coconut until golden
- Chop Oreos roughly.
- Chop Marshmallows roughly.
- Place cooled coconut, oreos and marshmallows in a bowl.
- Melt chocolate using whatever method you are comfortable with. I do it on a double boiler. Allow to cool slightly.
- Add coconut, oreo, marshmallow mix to melted chocolate and stir well.
- Transfer mixture to a baking paper lined tray and place in fridge to set.
- Chop into large pieces and eat!
