White Chocolate Cookies and Cream Rocky Road

Ingredients

• 750 g white chocolate
• 250 g white marshmallows
• 1 cup dessicated coconut
• 150 g oreo biscuits

Method

1. Toast coconut until golden 
2. Chop Oreos roughly.
3. Chop Marshmallows roughly.
4. Place cooled coconut, oreos and marshmallows in a bowl.
   
   
5.  Melt chocolate using whatever method you are comfortable with. I do it on a double boiler. Allow  to cool slightly.
6. Add coconut, oreo, marshmallow mix to melted chocolate and stir well.
7. Transfer mixture to a baking paper lined tray and place in fridge to set.
8. Chop into large pieces and eat!
